Egg scramble Indian style is a great way to use leftover rice and a handful of veggies if you have some leftovers in the fridge. This is basically an almost clean your fridge type recipe. So you can use any vegetable of your choice. Broccoli, zucchini, cabbage, celery, peppers, cauliflower and other types of vegetables can be added and fried together.
Tips for Making Easy and Quick Egg Fried Rice Indian Style
- Leftover rice is always a better choice than freshly cooked rice because the grains don’t stick together and stay separate. However, when you use leftovers, take care to store them properly in the refrigerator.
- It’s okay to have some chopped vegetables in the fridge, not only for this egg fried rice recipe, but it makes life easier because you can use them in a variety of dishes.
- It’s better to use a non-stick pan so it consumes less oil, the eggs or rice don’t stick to the bottom of the pan, and the rice grains don’t get mushy.
- When cooking veggies, don’t overcook them so they still retain a bit of crunch and taste great with soft hard-boiled eggs and rice.
