  • 2 cups basmati or long grain rice, rinsed
  • water
  • appropriate amount of salt
  • (*or use 4 cups leftover cooked rice)

Egg Fried Rice:

  • 2 tablespoons sesame oil or oil of your choice
  • 3 cloves garlic, chopped
  • 3 cups chopped vegetables (I used red bell peppers or peppers, green beans and carrots)
  • 4 large eggs, lightly beaten
  • 1/4 teaspoon ground black pepper (black pepper)
  • 2 teaspoons white vinegar
  • 1 tablespoon soy sauce
  • appropriate amount of salt



  1. If using basmati rice, soak it in water for 20 minutes for best results.
  2. If using long grain rice, follow the instructions below.
  3. Boil plenty of water in a large saucepan. Season with salt. Add rice. When cooked, drain and cool.

Egg Fried Rice:

Heat oil in a large pot or frying pan over high heat. Add the garlic and fry for a few seconds. Add vegetables. Season with salt. Sauté for 3 minutes or until vegetables are tender but crisp. Move vegetables to the side. Pour in the beaten eggs. Season with salt. When the egg starts to set, break it up into scrambled eggs. Season with black pepper. Add white vinegar. Stir in the cooked rice. Add soy sauce. Stir fry for 3-4 minutes or until heated through. Remove from fire. Garnish with green onions.


  • You can add other vegetables such as corn, green onions and bean sprouts to fried rice.
  • To make this non-vegan, just add some chopped bacon, ham or roast chicken.
