Smoked cream cheese recipe — Preparation before making

  • A 9″ x 9″ disposable aluminum pan (or cast iron skillet)
  • One 8-ounce package of full-fat cream cheese
  • 1- 1 1/2 tablespoons BBQ rub

Usually, this recipe is seasoned with dry ranch dressing or a dry onion soup mix, but since we wanted more BBQ flavor, a popular Kansas City rub was used for this recipe.

Gather your ingredients. We recommend regular full-fat cream cheese and cannot comment on how well a low-fat, whipped, or light version would work. Our guess is that the lighter version releases water as it cooks, which may interfere with the smoking process.

Next is friction. Use your favorite bottled sweetened liniment or use one of our liniment formulas. To make serving and cleanup a breeze, we recommend using disposable aluminum pans. You can also use double layers of aluminum foil. The following are detailed practices:

Grill Settings:

Preheat your grill to 225°F in advance and mix in hickory or mesquite wood, or milder and heavier wood flavors, for a more intense flavor.

Smudge wipe:

Carefully remove the cream cheese cubes from the foil packets and place them directly into the aluminum pan. Brush it with neutral oil, then sprinkle with 1 to 1 1/2 tablespoons of BBQ rub.

Put in the oven:

Place entire pan with seasoned cream cheese in smoker. Cover and cook for 90 minutes to 2 hours. (recommended cooking temperature is 210-225 degrees)

Dessert – To make a dessert version, just coat the cream cheese with white sugar, brown sugar, honey, or your favorite sugar-free sweetener. Cinnamon is a great addition, and you can even use pre-made cinnamon sugar. You can serve it with fruit like sliced apples, brioche shells, or cinnamon pita.
